Chicken with Parmesan Cauliflower & Spinach Quinoa

Heeey guys! How’s it going?
Today we are here to share with you our version of one of goodfood recipes. Yes, it has inspired us, but we found that the ingredients in goodfood’s recipes are very we decided to make them more “accessible” I guess…anyway…we hope you guys like it!!!
It is a veeeery easy recipe. There is just one little thing before we get started. You can fry the chicken if you’d like, that would take less time…but as we are trying to cut as much “fried food“ from our diets as we can, we opted to use the oven.
I think we are ready to start.


2 Chicken Breasts
60g Baby Spinach
1 Bunch of Parsley
1 Shallot
25g Parmesan Cheese
15ml Red wine vinegar
80g Quinoa
170g Cauliflower
Spices as you like

How to:

Preheat the oven to 450F. Pat the chicken dry with paper towel. Season with the spices you have chosen and put it in the oven.
Chop the spinach. In a pot, combine the Quinoa, add 1 cup of water and salt, bring to a boil. Reduce the heat, cover and let it simmer until the quino ais tender and the water is absorbed. Throw in the spinach and mix.

Cut the cauliflower. On a sheet pan, toss the cauliflower with a drizzle of oil, season with the spices you have chosen and salt and pepper. Roast in the oven. Halfway through, add a bit of the Parmesan cheese. Continue to cook until the cheese has melted.

Mince the shallot and chop the parsley. Melt 2 tbsp of butter. Add the shallots. Cook, stirring frequently. Season with salt and pepper. Add the vinegar and cook for another minute.

Transfer to a bowl, add the parsley and a drizzle of oil and season with the spices you have chosen and salt and pepper.
To the pot of quinoa, add Parmesan, ½ of the vinaigrette you just made, stir to combine.
