We’ve been pretty busy lately, buuut we always find time to share some of the things we love with you, because we’re like that! hahahah
Do you want to know how to make the easiest carrot cake in the entire world?? Then today is your lucky day! In today’s post we are going to teach you how to bake a vegan carrot cake! hahaha
Kevin is an amazing cook but he has never had a hand for baking cakes or deserts. HOWEVER, he absolutely NAILED IT with this recipe!!!
With that being said, if he could do it, I’m sure you can too! hahahha
Without further ado, here are the ingredients:
2 grated carrots
½ cup of vegetable oil
1 ½ cups of oat milk (or any other vegetable milk)
3 cups of all-purpose flour
2 cups of brown sugar
2 tablespoons of baking powder
1/3 teaspoon of salt
-First, preheat your oven to 300F. Grease and flour the sheet pan.
-After all that, in a bowl combine all the dry ingredients, such as, the flour, brown sugar and the salt.
-In a blender, combine all the wet ingredients, such as, grated carrots, oil, oat milk and blend everything for about 5 minutes.
– Now is the final part (uhuuul) in a bowl combine the dry mixture and the wet mixture and stir for like 2 minutes (or till everything is all mixed), put the baking powder and GENTLY stir again for 1 minute!
– Pour evenly into the prepared pan.
-Bake for 35 to 45 minutes in the preheated oven,
– Now here is a tip to find out when the cake is done, get a wooden toothpick. And pierce the cake, if the toothpick comes out clean, the cake is ready!
-Let it cool for 10 minutes before removing from pan.
Now, you must be asking what is this delicious-looking topping, right?
Well, it is called ‘brigadeiro’. It’s a traditional Brazilian desert. It is not vegan tho, so you should know that.
But the topping is up to you! Get creative or just enjoy it as it is!
